Instructions
- Preheat lightly oiled pan on medium heat
- In a medium size bowl, whisk together flour, baking powder, salt, and sugar
- In a large bowl, beat egg well and add milk, and oil
- Add dry ingredients to wet bowl and whisk just until batter is smooth
- Drop batter into pan using a measuring cup as a scoop
- When bubbles form and surface looks a little dry, flip and bake second sides until golden brown
Pancake batter will thicken on standing, and it may be necessary to stir in a little milk.
This recipe can be doubled safely.
