Superb pancakes.

This recipe can be doubled safely for larger breakfast gatherings (or very hungry people).

Ingredients

  • 1 cup flour
  • 2-1/2 tsp baking powder
  • 2-3/4 tsp salt
  • 2 tbsp white sugar

  • 3 tbsp oil
  • 1 cup milk
  • 1 egg, well-beaten

Instructions

  1. Preheat lightly oiled pan on medium heat
  2. In a medium size bowl, whisk together flour, baking powder, salt, and sugar
  3. In a large bowl, beat egg well and add milk, and oil
  4. Add dry ingredients to wet bowl and whisk just until batter is smooth
  5. Drop batter into pan using a measuring cup as a scoop
  6. When bubbles form and surface looks a little dry, flip and bake second sides until golden brown

Pancake batter will thicken on standing, and it may be necessary to stir in a little milk.
