Scotch shortbread cookies.

Oven temp 340°F Cook time 10 min

Ingredients

  • 1 cup butter
  • 1/2 cup icing sugar
  • 1/2 corn starch

  • 1 cup + 1 tbsp. flour

  • 3-4 frozen cherries, diced

Instructions

  1. In a large bowl, cream together butter, icing sugar, and corn starch using electric hand mixer.
  2. Add flour and use mixer to blend well.
  3. Roll 3/4" balls by hand, and place on parchment-lined cookie sheet. Do not flatten balls.
  4. Top each ball with small piece of still frozen cut cherry.
  5. Bake at 340°F for 10 minutes. Don't overbake!
