Scotch shortbread cookies.
Oven temp 340°F
Cook time 10 min
Ingredients
- 1 cup butter
- 1/2 cup icing sugar
- 1/2 corn starch
- 3-4 frozen cherries, diced
Instructions
- In a large bowl, cream together butter, icing sugar, and corn starch using electric hand mixer.
- Add flour and use mixer to blend well.
- Roll 3/4" balls by hand, and place on parchment-lined cookie sheet. Do not flatten balls.
- Top each ball with small piece of still frozen cut cherry.
- Bake at 340°F for 10 minutes. Don't overbake!
