Scalloped potatoes.

You've got a good excuse to dust off the mandolin for this hearty favourite side dish.

Oven temp 375°F Cook time 70-75 min

Ingredients

  • 3 medium potatoes, peeled and sliced to 1/8" to 1/4" thick

  • 1/2 cup shredded cheddar cheese
  • 1 can condensed cream of mushroom soup
  • 1/3 cup sour cream
  • 1/4 cup milk
  • 2 tsp. butter, melted
  • salt
  • pepper

  • 1/4 cup shredded cheddar cheese

Instructions

  1. Place a layer of overlapping sliced potatoes in an oven-safe glass dish (line with aluminum foil for easy clean-up).
  2. In a medium bowl, whisk together all ingredients, saving 1/4 cup cheese.
  3. Spread half of mixture over potatoes.
  4. Add remainder of potatoes and cover with remaining mixture.
  5. Bake at 375°F for 60 minutes.
  6. Remove from oven and sprinkle remaining cheese on top.
  7. Continue baking for additional 10 minutes.
  8. For a more crispy top, broil on high for 3-4 minutes, being careful not to burn.
