Scalloped potatoes

You've got a good excuse to dust off the mandolin for this hearty favourite side dish.

Ingredients
3 medium potatoes, peeled and sliced to 1/8" to 1/4" thick
1/2 cup shredded cheddar cheese
1 can condensed cream of mushroom soup
1/3 cup sour cream
1/4 cup milk
2 tsp. butter, melted
salt
pepper
1/4 cup shredded cheddar cheese
Instructions
Place a layer of overlapping sliced potatoes in an oven-safe glass dish (line with aluminum foil for easy clean-up).
In a medium bowl, whisk together all ingredients, saving 1/4 cup cheese.
Spread half of mixture over potatoes.
Add remainder of potatoes and cover with remaining mixture.
Bake at 375°F for 60 minutes.
Remove from oven and sprinkle remaining cheese on top.
Continue baking for additional 10 minutes.
For a more crispy top, broil on high for 3-4 minutes, being careful not to burn.
