Lemon bar deluxe.

Delicious if you are very partial to lemon, or substitute lime for lemon. Freezes well.

Oven temp 350°F Cook time 45-50 min

Ingredients

  • 2 cups flour
  • 4 beaten eggs
  • 1/2 cup sifted icing sugar
  • 2 cups white sugar
  • 1/4 tsp. baking powder
  • 1 cup butter
  • 1/3 cup lemon juice

Base

  1. Sift 2 cups flour and icing sugar.
  2. Cut in butter until clinging.
  3. Press into 13x9x2 pan.
  4. Bake at 350°F for 20-25 minutes.

Filling

  1. Beat eggs, sugar, and lemon.
  2. Sift the 1/4 cup flour and baking powder.
  3. Stir into egg mixture and pour over crust.
  4. Bake at 350°F for 25 minutes.
  5. Sprinkle lightly with icing sugar.
  6. Cool and cut.
