Jam-jams.

These cookies require a donut cutter with removable center cut-out and a solid understanding of the English language to get through these instructions. Good luck!

Oven temp 350°F Cook time 8-10 min

Ingredients

  • 1 cup brown sugar
  • 1 cup butter
  • 2 eggs
  • 6 tbsp. corn syrup
  • 1 tsp. vanilla

  • 3 cups flour, approximately
  • 1 tsp. baking soda
  • pinch salt

  • additional flour to dust countertop
  • jam of your choice for filling

Instructions

  1. In a large bowl, mix brown sugar, butter, eggs, corn syrup, and vanilla.
  2. In a medium bowl, mix approx. 3 cups flour, baking soda, and salt.
  3. Pour dry mixture into wet mix. Blend together until consistency of peanut butter, adding flour if necessary.
  4. Let batter sit in the fridge to set for approximately 1 hour.
  5. Dust countertop with flour and roll dough using rolling pin until 3/16" thin.
  6. Using donut cutter, cut half of the dough into solid discs (bottoms), and other half into discs with center cut-out (tops).
  7. Place all bottoms on parchment-lined baking sheet, and all tops on a separate sheet. Do not combine bottoms and tops on same sheet, as they bake at different rates!
  8. Bake in preheated oven at 350F for 8-10 minutes, until golden brown.
  9. Allow cookies to cool.
  10. For softer cookies, spread jam on bottoms and combine with tops and store overnight. For crispy cookies, spread jam and combine just before eating.
