Ingredients
- 1 cup brown sugar
- 1 cup butter
- 2 eggs
- 6 tbsp. corn syrup
- 1 tsp. vanilla
- 3 cups flour, approximately
- 1 tsp. baking soda
- pinch salt
- additional flour to dust countertop
- jam of your choice for filling
Instructions
- In a large bowl, mix brown sugar, butter, eggs, corn syrup, and vanilla.
- In a medium bowl, mix approx. 3 cups flour, baking soda, and salt.
- Pour dry mixture into wet mix. Blend together until consistency of peanut butter, adding flour if necessary.
- Let batter sit in the fridge to set for approximately 1 hour.
- Dust countertop with flour and roll dough using rolling pin until 3/16" thin.
- Using donut cutter, cut half of the dough into solid discs (bottoms), and other half into discs with center cut-out (tops).
- Place all bottoms on parchment-lined baking sheet, and all tops on a separate sheet. Do not combine bottoms and tops on same sheet, as they bake at different rates!
- Bake in preheated oven at 350F for 8-10 minutes, until golden brown.
- Allow cookies to cool.
- For softer cookies, spread jam on bottoms and combine with tops and store overnight. For crispy cookies, spread jam and combine just before eating.
