Hurry-up cake.

You can whip this cake up in a flash. Finish it off with some supple icing.

Oven temp 350°F Cook time 30 min

Cake Ingredients

  • 2 eggs, beaten
  • 1 cup sugar
  • 1 cup flour
  • 1-1/2 tsp. baking powder

  • 1/2 cup milk
  • 3 tbsp. butter
  • 1/2 tsp. vanilla

Icing Ingredients

  • 3/4 cup brown sugar
  • 2 tbsp. cream or milk
  • 1/2 tsp. vanilla
  • 1 tbsp. butter, soft
  • icing sugar (to thicken)

Cake Instructions

  1. Beat eggs well.
  2. In separate bowl, combine sugar, flour, and baking powder. Mix in eggs.
  3. In a small pot, heat milk and add butter and vanilla.
  4. Add warmed mixture to batter while still warm and blend well.
  5. Pour batter into greased 7x11 baking pan.
  6. Bake in preheated oven at 350°F for 30 minutes.
  7. Allow cake to cool before icing.

Icing Instructions

  1. In a small pot, add brown sugar and cream (or milk).
  2. Bring to a boil over medium heat and boil for 2 minutes, stirring frequently.
  3. Remove from heat and gradually add icing sugar to thicken. Icing will thicken further when cool, so don't over-thicken.
  4. Stir in vanilla and butter and spread while soft.
