Guisado de Pollo.

Chicken stew, Dominican-style.

Ingredients

  • 2 lbs chicken, cut into pieces
  • 1 lime, juiced
  • 2 tbsp soy sauce (optional)
  • 3 tbsp oil
  • 1 cup water
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 2 cloves garlic, minced
  • 1/4 cup tomato sauce
  • 1/2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken with lime juice, soy sauce, salt, and pepper.
  2. In a pot, heat oil over medium heat and brown the chicken.
  3. Add garlic, onions, and bell peppers, cook until they soften.
  4. Add tomato sauce, oregano, and water. Cover and let it simmer until the chicken is cooked through (about 30 minutes).
