Chocolate chip banana bread.

Not too sweet, and a perfect way to use up overripe bananas. 

Oven temp 350°F Cook time 60-65 Yield 1 loaf

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2/3 cup brown sugar
  • 2 large eggs
  • 1 1/2 cups mashed ripe bananas (about 3-4 medium bananas)
  • 1/3 cup 10% cream
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  2. Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. Cream Butter and Sugar: In a large bowl, use an electric mixer to cream the softened butter and brown sugar until light and fluffy.
  4. Add Eggs and Bananas: Beat in the eggs one at a time, then stir in the mashed bananas, 10% cream, and vanilla extract until well combined.
  5. Incorporate Dry Ingredients: Gradually add the dry ingredients to the banana mixture, stirring just until incorporated. Avoid overmixing.
  6. Fold in Chocolate Chips: Gently fold in the chocolate chips.
  7. Pour and Bake: Pour the batter into the prepared loaf pan. Bake for about 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool: Let the bread cool in the pan for about 10 minutes, then turn out onto a wire rack to cool completely.
