Carrot cake.

This moist and freezer-friendly cake is a family favourite. Serve it up with a cream-cheese frosting.

Oven temp 350°F Cook time 30-35 min

Ingredients

  • 1-1/2 cup vegetable oil
  • 4 eggs
  • 2 cups white sugar

  • 2 cups flour
  • 2 tsp. baking soda
  • 2 tsp. cinnamon

  • 3 cups carrots, grated

Instructions

  1. Grease and lightly flour a 9x13 baking pan.
  2. In a large bowl, mix oil, eggs, and sugar.
  3. In a medium bowl, mix together flour, baking soda, and cinnamon.
  4. Add dry mixture into wet mix and beat well, until creamy.
  5. With a wooden spoon, mix in grated carrots.
  6. Pour batter into prepared baking pan.
  7. Bake in preheated oven at 350°F for 30-35 minutes.
